Yanhu town in Yangzhou's Fangxiang village, located along Shaobo Lake, is famous for its boat dishes made of special aquatic products caught on the spot.
People can enjoy the original flavors of lobsters, crabs, turtles, whitebait, long fish, eels and other fresh fish, as most of the fishermen boil or steam them to keep their exceptional delicacy.
Shen Changlai, a resident of Yanhu town, has been working as fisherman with his family for years. He also runs an inn and cooks for people visiting the town.
Shen's representative dish is named guo gai yu, meaning fish in the pot cover. He will insert the scales or claws of the fish into a wooden pot lid and steam it over soup-stock. The cooked fish will break away from the scales and fall into and mix with the soup, making it an appetizing delicacy.
